a2 Milk™ is natural cows’ milk which is produced by cows genotyped and selected to produce the A2 beta-casein type but not A1 beta-casein. Beta-casein comprises 30% of the total protein in cows’ milk. Ordinary cows’ milk contains a mixture of A1 and A2 beta-casein, but a2 Milk™ contains only A2 beta-casein.

 

A1 beta-casein digests differently to A2 due to a slight difference in the amino acid sequence of the protein chain. During gastrointestinal digestion, A1 beta-casein preferentially releases beta-casomorphin-7 (BCM-7) whereas the structure of A2 beta-casein limites its release.
