Deliciously creamy eggnog

  • ½ tsp vanilla extract
  • 1 tsp ground cinnamon
  • 950ml of a2 Milk™ Full cream
  • 12 egg yolks
  • 230g golden caster sugar
  • 950ml goats’ cream
  • 2 tsp vanilla extract
  • Nutmeg to sprinkle


  • Pour the vanilla extract, cinnamon and a2 Milk™ Full cream into a saucepan and gently heat for around 5 minutes before bringing slowly to the boil, stirring frequently. Once at boiling point, remove from the heat.
  • In a bowl, add the egg yolks and sugar and whisk until light in colour.
  • Carefully pour the hot milk mixture bit by bit into the eggs, stirring continuously.
  • Pour the mixture back into the saucepan, and cook over a medium heat, stirring constantly until thickened, being careful not to let it boil!
  • Remove from the heat, stir in the goat’s cream, vanilla extract and serve with a sprinkle of nutmeg on top.
