Banana and Walnut Loaf

Ingredients

Wet Ingredients

  • 3 Very ripe bananas, mashed
  • 1 Egg
  • 4 tbsp Coconut oil, melted
  • 2 tbsp Honey
  • 1/2 cup a2 Milk® Full Cream
  • 1 tsp Vanilla extract

Dry Ingredients

  • 2 cups Rolled oats
  • 2 tsp Baking powder
  • 1/2 cup Walnuts, roughly chopped
  • 2 tbsp Chia seeds
  • 1/2 tsp Ground cinnamon

Garnish

  • 1 Ripe banana, sliced in half lengthways

Directions

  1. Preheat oven to 180°C (160°C fan-forced). Line a 23cm x 13cm loaf tin with baking paper.
  2. In a large bowl, combine all the wet ingredients: mashed bananas, egg, melted coconut oil, honey, a2 Milk® Full Cream, and vanilla extract. Mix well.
  3. Place the rolled oats in a blender or food processor. Blend until they reach the consistency of flour, about 30 seconds.
  4. Add the blended oats and all remaining dry ingredients (baking powder, walnuts, chia seeds, and cinnamon) to the wet mixture. Stir until just combined.
  5. Pour the batter into the prepared loaf tin. Gently press the halved banana slices into the top of the batter.
  6. Bake for 45-55 minutes until golden and a skewer inserted into the centre comes out clean.
  7. Allow to cool in the tin for 10 minutes, then transfer to a wire rack to cool for a further 10 minutes before slicing.
  8. Serve warm or at room temperature.
