Creamy Mushroom & Onion Pizza

Ingredients

Pizza Base

  • 2 Pre-made pizza bases (or homemade dough)

Creamy Sauce

  • 3 tbsp Margarine
  • 2 tbsp Plain flour
  • 1 cup a2 Milk® Full Cream
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper
  • 1/4 cup Nutritional yeast

Toppings

  • 1 tbsp Margarine
  • 1/2 White onion, thinly sliced
  • 1 cup Mushrooms, sliced
  • 2 Garlic cloves, minced
  • 2 cups Baby spinach
  • 1 cup Pecorino Romano, shredded

Directions

Sauce

  1. Preheat oven to 220°C (200°C fan-forced).
  2. Melt 3 tbsp margarine in a small saucepan over medium heat. Add the flour and whisk until well combined, about 1 minute.
  3. Gradually add the a2 Milk® Full Cream, whisking constantly to avoid lumps.
  4. Add salt, pepper, and nutritional yeast. Stir until the sauce is smooth and thickened, about 2-3 minutes. Remove from heat and set aside.

Toppings

  1. Heat 1 tbsp margarine in a frying pan over medium heat. Add the sliced onion and mushrooms. Cook for 5-6 minutes, stirring occasionally, until golden brown.
  2. Assemble: Spread the creamy sauce evenly over the pizza bases. Top with the sautéed onion and mushrooms, minced garlic, spinach, and vegan cheese.
  3. Bake for 15 minutes or until the edges are golden and the cheese is melted and bubbling.
  4. Slice and serve immediately.
