Dr Joanna McMillan's Blueberry Clafoutis

Ingredients

  • 65g Wholemeal flour
  • 1/2 tsp Baking powder
  • 3 Large eggs
  • 45g Stevia sweetener (or sugar substitute of choice)
  • 1 tbsp Stevia sweetener, for sprinkling
  • 300ml a2 Milk® Lactose Free Full Cream
  • 1 tsp Orange rind, finely grated
  • 1 tbsp Extra virgin olive oil, plus extra for greasing
  • 150g Blueberries, fresh or frozen (or pitted cherries)

Directions

  1. Preheat oven to 180°C (160°C fan-forced).
  2. Place the flour, baking powder, eggs, 45g sweetener, a2 Milk® Lactose Free Full Cream, and orange rind in a blender or food processor. Blitz until smooth.
  3. Set batter aside to rest for 30 minutes.
  4. Brush a 25cm round cast iron pan or baking dish with extra virgin olive oil. Sprinkle 1 tbsp sweetener evenly over the base.
  5. Scatter the blueberries over the base of the dish. Pour the batter gently over the top.
  6. Bake for 30 minutes or until golden on top and set in the centre.
  7. Remove from oven and set aside to cool slightly. Serve warm or at room temperature.
