Easter Carrot Cake Porridge

Ingredients

Porridge:​

  • 1 1/2 cups rolled oats​
  • 3 cups a2 Milk® Full Cream
  • 1/2 tbsp coconut sugar ​
  • Pinch of sea salt​
  • 1 tsp cinnamon​
  • 1/2 tsp nutmeg​
  • 1/4 cup grated carrot

Toppings:

  • Apple​
  • Roasted hazelnuts ​
  • Almond butter​
  • Applesauce ​
  • Steamed a2 Milk®​
  • Cinnamon

Instructions:

  1. In a pot, pour in oats, carrot, spices, coconut sugar and milk, then bring to a gentle simmer ​
  2. If the mixture begins to thicken too quickly or the oats start clumping, add a splash of water so the oats stay soft and cook evenly.​
  3. Simmer gently for 10-15 minutes, stirring occasionally, until the oats are soft and creamy. Test a small spoonful, the oats should be tender with no firmness
    remaining. Once they begin to thicken and hold their shape, they’re ready to serve​
  4. Pour out the oats into a bowl, top with the roasted hazelnuts, almond butter, apple pieces, applesauce ​
  5. Steam some a2 Milk® Full Cream using a coffee machine and pour on top of each bowl, finish with a sprinkle of cinnamon
