Homemade Ricotta

Ingredients

  • 2L a2 Milk® Full Cream
  • 1 Lemon
  • Salt and pepper to taste

Optional

  • Sourdough bread
  • Tomato
  • Basil
  • Olive oil to drizzle

Directions

  1. Pour 2 litres of a2 Milk® Full Cream into a large saucepan.
  2. Stir slowly on medium heat until it reaches 85°C.
  3. Turn off the heat and season with half a tablespoon of salt.
  4. Add the juice of one lemon, mix as the curds begin to separate from the whey.
  5. Carefully ladle the curds into a cheesecloth or tea towel.
  6. Let the cloth sit and strain for 20 minutes.
  7. Strain out remaining liquid and serve.
  8. Optional: Serve on sourdough toast, garnished with fresh tomato, basil, a drizzle of olive oil and salt and pepper.
