Directions
Cook the sago
Bring a pot of water to boil. Add sago and cook for 10–15 minutes until translucent, stirring occasionally. Drain and rinse under cold water. Set aside.
Prepare the mango: Blend 11⁄2 mangoes into a smooth purée. Dice the remaining half for garnish.
Mix the base
In a bowl, combine mango purée, a2 Milk® Lactose Free Full Cream, coconut yoghurt, agave and a pinch of salt. Stir until smooth.
Add sago: Fold in the cooked sago pearls and pour 4 drinking vessels 3⁄4 full. Chill in the fridge for at least 30 minutes.
Serve
Top the glasses with ice cubes, a splash of a2 Milk® Lactose Free Full Cream milk, diced mango and shredded coconut.
