Lunar New Year - Mango Sago

Ingredients

  • 2 ripe mangoes (peeled and diced, plus extra for garnish)
  • 1⁄2 cup small boiled tapioca pearls (sago)
  • 1 cup a2 Milk® Lactose Free Full Cream
  • 1⁄2 cup Coconut yoghurt
  • 1 tbsp Agave syrup
  • A pinch of salt
  • 8 Ice cubes
  • 1⁄4 cup a2 Milk® Lactose Free Full Cream for topping
  • Shredded coconut for topping

Directions

Cook the sago

  1. Bring a pot of water to boil. Add sago and cook for 10–15 minutes until translucent, stirring occasionally. Drain and rinse under cold water. Set aside. 
  2. Prepare the mango: Blend 11⁄2 mangoes into a smooth purée. Dice the remaining half for garnish. 

Mix the base

  1. In a bowl, combine mango purée, a2 Milk® Lactose Free Full Cream, coconut yoghurt, agave and a pinch of salt. Stir until smooth. 
  2. Add sago: Fold in the cooked sago pearls and pour 4 drinking vessels 3⁄4 full. Chill in the fridge for at least 30 minutes. 

Serve

  1. Top the glasses with ice cubes, a splash of a2 Milk® Lactose Free Full Cream milk, diced mango and shredded coconut.
