Potato salad

Ingredients

  • 1.5kg Potatoes
  • 1 tsp Salt
  • 2 tsp Dry mustard
  • 2 tbsp Brown sugar
  • 2 tbsp Plain flour
  • Pinch cayenne pepper
  • 2 cups a2 Milk® Full Cream
  • 3 Egg yolks
  • 3 tbsp Margarine
  • 1/3 cup Vinegar
  • 1 tsp White horseradish

Directions

  1. Combine salt, mustard, brown sugar, flour and cayenne pepper in a heavy saucepan.
  2. Add a2 Milk® Full Cream and egg yolks. Stir until smooth.
  3. Cook over boiling water (or medium heat), stirring constantly until thickened.
  4. Stir in margarine and vinegar. Chill thoroughly.
  5. Cut potatoes into halves. Place in cold water, bring to a boil and cook until tender but not falling apart. Drain well.
  6. Stir horseradish into dressing. Add all or as much as you’d like to the potatoes. Combine well and season to taste. Serve.
