Delicious and easy potato salad made with a2 Milk™

  • 1.5kg potatoes
  • 1 tsp (5ml) salt
  • 2 tsp (10ml) dry mustard
  • 2 tbsp (30ml) brown sugar
  • 2 tbsp (30ml) plain flour
  • Pinch of Cayenne pepper
  • 2 cups (500ml) a2 Milk™
  • 3 egg yolks
  • 3 tbsp (45ml) butter
  • ⅓ cup (80ml) vinegar
  • 1 tsp (5ml) white horseradish


• Combine salt, mustard, brown sugar, flour and cayenne pepper in a heavy saucepan.
• Add a2 Milk™ and egg yolks. Stir until smooth.
• Cook over boiling water (or medium heat), stirring constantly until thickened.
• Stir in butter and vinegar. Chill thoroughly.
• Cut potatoes into halves. Place in cold water, bring to a boil and cook until tender but not falling apart. Drain well.
• Stir horseradish and mustard into dressing. Add all or as much as you’d like to the potatoes. Combine well and season to taste. Serve.
