Savoury French toast

Ingredients

French Toast

  • 4 Slices sourdough bread
  • 2 Eggs
  • 2 tbsp a2 Milk® Full Cream
  • Olive oil spray, for cooking

Toppings

  • 125g Cherry truss tomatoes
  • 4 Rashers bacon
  • 1 Small avocado, sliced
  • 50g Feta cheese, crumbled
  • Fresh basil leaves, to serve

Directions

  1. Preheat oven to 180°C (160°C fan-forced). Line a baking tray with baking paper.
  2. Place the cherry tomatoes on the prepared tray. Roast for 10 minutes or until slightly wilted and starting to burst. Set aside.
  3. Meanwhile, cook the bacon rashers in a frying pan over medium-high heat for 2-3 minutes each side until crispy. Transfer to a plate lined with paper towel.
  4. In a large shallow bowl, whisk together the eggs and a2 Milk® Full Cream until well combined.
  5. Lightly spray a large non-stick frying pan with olive oil and heat over medium heat.
  6. Dip 2 slices of bread into the egg mixture, one at a time, ensuring both sides are well soaked.
  7. Cook for 2 minutes each side or until golden brown and the egg is set. Transfer to serving plates.
  8. Repeat with the remaining 2 slices of bread and egg mixture.
  9. Top the French toast with roasted tomatoes, crispy bacon, sliced avocado, and crumbled feta. Garnish with fresh basil leaves and serve immediately.
