Savoury waffles

Ingredients

Waffle Batter

  • 2 cups Plain flour
  • 1 tsp Salt
  • 4 tsp Baking powder
  • 2 Eggs
  • 1 3/4 cups a2 Milk® Full Cream
  • 1/2 cup Margarine, melted
  • 1 tsp Vanilla extract

Savoury Mix-ins

  • 200g Bacon, chopped and cooked until crispy
  • 2 cups Baby spinach, shredded
  • 1 cup Halloumi, grated
  • 2 tbsp Fresh chives, chopped

Topping

  • 2 tsp Extra virgin olive oil
  • 6 Eggs (1 per serving)
  • Sea salt and cracked black pepper, to serve

Directions

  1. Cook the chopped bacon in a frying pan over medium-high heat for 5-6 minutes until crispy. Drain on paper towel and set aside to cool slightly.
  2. In a large bowl, whisk together the flour, salt, and baking powder.
  3. In a separate bowl, beat the 2 eggs. Stir in the a2 Milk® Full Cream, melted margarine, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients. Beat until just combined and smooth.
  5. Fold in the cooked bacon, shredded spinach, grated halloumi, and chives until evenly distributed.
  6. Preheat a waffle iron according to manufacturer's instructions.
  7. Pour batter into the preheated waffle iron (amount will depend on your waffle iron size). Cook for 6-7 minutes or until golden brown and crisp.
  8. Remove and keep warm. Repeat with remaining batter to make 6 waffles.
  9. Heat the olive oil in a large non-stick frying pan over medium heat. Fry the eggs to your liking, 1-2 minutes for sunny-side up.
  10. Place each waffle on a serving plate. Top with a fried egg and sprinkle with sea salt and cracked black pepper. Serve immediately.
