Spiced rice pudding

Ingredients

  • 1 tbsp Margarine, for greasing
  • 1L a2 Milk® Full Cream (plus extra 100ml if needed)
  • 200g Jasmine rice
  • 1 Orange, finely zested
  • 1 tsp Mixed spice
  • 1 tsp Ground cinnamon
  • 1/4 tsp Ground nutmeg

To Serve

  • 1 Orange, segmented
  • 2 tbsp Honey
  • 1/4 cup Sultanas

Directions

  1. Generously coat the inside base and halfway up the sides of a slow cooker with the margarine.
  2. Pour the 1L a2 Milk® Full Cream into a saucepan. Heat over medium heat until just simmering. Do not boil.
  3. Add the jasmine rice to the slow cooker. Pour the hot milk over the rice.
  4. Add the orange zest, mixed spice, cinnamon, and nutmeg. Stir gently to combine.
  5. Cover and cook on low for 4 hours, stirring once or twice if possible.
  6. After 3 hours, check the pudding. If it's beginning to stick to the base, add a splash of water.
  7. The rice is ready when tender and creamy. If the pudding is too thick, stir in 100ml extra a2 Milk® Full Cream to loosen.
  8. Spoon into serving bowls. Top with fresh orange segments, a drizzle of honey, and sultanas. Serve warm.
