Zesty Lemon Pudding

Ingredients

  • 3 Eggs, separated
  • 1/2 cup Caster sugar (for yolks)
  • 1 cup a2 Milk® Full Cream
  • 1 tbsp Self-raising flour
  • 1 tbsp Lemon rind, finely grated
  • 1/2 cup Lemon juice
  • 1 tbsp Caster sugar (for egg whites)

Directions

  1. Preheat oven to 160°C (140°C fan-forced). Grease a 1-litre baking dish.
  2. Beat egg yolks and sugar until pale and creamy.
  3. Add a2 Milk® Full Cream, lemon juice, and lemon rind. Fold in flour until just combined.
  4. In a separate clean bowl, beat egg whites until soft peaks form. Add sugar and beat until just combined.
  5. Gently fold egg white mixture into the lemon mixture. Pour into prepared baking dish.
  6. Place dish in a deep roasting pan. Pour hot water into pan until halfway up the sides of the dish.
  7. Bake for 50-60 minutes until golden and sponge springs back when touched.
  8. Serve warm, dusted with icing sugar if desired.
