Zucchini and Corn Fritters

Ingredients

  • 1 1/2 cups Self-raising flour
  • Salt and pepper, to taste
  • 2 Eggs
  • 1 cup a2 Milk® Full Cream
  • 1 Medium zucchini, ends removed and coarsely grated
  • 1 1/2 cups Fresh corn kernels (from about 2 large cobs)
  • 2-3 tbsp Olive oil, for frying

Directions

  1. Sift the flour into a large mixing bowl. Season with salt and pepper.
  2. In a jug, whisk together the a2 Milk® Full Cream and eggs until combined.
  3. Pour the wet ingredients into the flour and stir until a smooth batter forms.
  4. Add the grated zucchini and corn kernels. Stir to combine evenly.
  5. Heat 1 tbsp olive oil in a large non-stick frying pan over medium heat until shimmering.
  6. Working in batches, spoon 1/4 cup batter per fritter into the pan, cooking 3 fritters at a time. Flatten slightly with the back of the spoon.
  7. Cook for 3-4 minutes each side, or until golden brown and firm to touch in the centre.
  8. Transfer to a wire rack or paper towel-lined plate. Repeat with remaining batter, adding more oil as needed.
  9. Serve warm with your choice of sour cream, smashed avocado, or poached eggs.
